When he accelerator peddle is fully depressed it gets to a sprung last inch. On a modern auto (fathers discovery 4 for one) this causes the vehicle to drop an extra gear and give you a good shot of acceleration for overtaking etc. however my car is a manual, yet it still makes a considerable difference when accelerating by pushing the peddle into this zone. What is this? Does it give extra turbo boost? It certainly sound good when using it.

When you have the car set in ECO mode the engine output is reduced, this kickdown feature on the accelerator pedal give you full power for accelerating etc

Even with this, I find ECO mode dangerous tbh. We never use it.

Although my car is on order, I'm pretty sure the test car I had with a multitronic was slower in ECO mode even with the foot flat to the floor - The revs went higher in dynamic mode vs. ECO mode at full throttle.

Pretty much because because of the reason given by thehorse below. The car is noticeable slower in Eco mode. I am guessing they only give you 60-70% of throttle range over 100% of the pedal travel. On motorways I find it a danger due to making the car so slow to respond.

I don't think the ECO mode per se is dangerous at all. Perhaps if someone expected response like a Lamborghini and deliberately created a road position where the only safe response was massive acceleration they might have encountered a dangerous situation. But that's a long way from saying the ECO mode itself is dangerous. As someone once said the most dangerous fitting on any car is the nut behind the wheel

I've had fast cars, I know what's sensible to expect. My opinion still stands that the difference between dynamic and eco is so drastic that it borders dangerous.

I tend to agree. I never use Eco mode on the motorway.
